This pop-up dinner is unique—Bougie na Dinakdakan, Pares na may lamb, and Uling na dessert are some of the stars. It will be held this June 25 and 26 at BRUTAL by Wadough’s for MANILLE: A French-Filipino Table Story. Chef Wado Tan Siman and Chef Jeffrey Le Bon will team up for an eight-course dinner filled with deliciousness and stories. This is not just a meal—it's a culinary storytelling that combines the flavors of the Philippines and French-Mediterranean cuisine.

The concept is not fusion—it's a conversation through food. The dishes are modern versions of favorite Filipino dishes, but with French finesse. The standout? Dinakdakan in crispy panipari, with ratatouille relish, sinamak jelly, and edamame—bougie but with a Filipino heart.
For the main course, don't miss the Lamb Pares with yaki onigiri with quail egg, spring onion espuma, and garlic confit. If you're craving something sweet, the Uling dessert is a sure win—with charcoal meringue, calamansi curd, pinipig, and other sweet treats that are perfect for closing the night.
MANILLE is a limited night of food and storytelling. For foodies who want something different, make your reservations now—because every bite here has its own story.
