
Hotteok is a popular Korean sweet pancake that is full of sweetness and usually has nut filling. It is different from regular pancakes because it uses fermented dough made with yeast. It needs to be knead like bread, and is best eaten warm.
For dough, combine all-purpose flour, cornstarch, glutinous rice flour, baking powder, baking soda, and salt. In another bowl, mix lukewarm milk, yeast, and sugar. Wait for the yeast to foamy before adding the oil to the dry ingredients and mixing until it forms a sticky dough. Cover and let rise for 2–3 hours.
For the filling, mix together the brown sugar, cinnamon, peanuts or cashews, and honey. Divide the dough into 8 pieces (each about 65g), roll, add filling, and seal the sides.
Heat 1/2 cup oil in a pan. Fry the Hotteok seam-side down for 2 minutes or until golden brown. Flip and press with a spatula or presser until flat and crispy. Serve hot.
