Ham Katipunan, who has more than <strong data-start=\"875\" data-end=\"900\">20 years at Ayala Land<\/strong>, is the vice president leading their office group. The kitchen is headed by <strong data-start=\"1626\" data-end=\"1659\">executive chef Tristan Bayani<\/strong>, who specializes in Filipino fusion and signature dishes like <strong data-start=\"1727\" data-end=\"1790\">lechon ribs, Batangas bulalo, kansi, and bibingka cheesecake<\/strong>. Their ribs are <strong data-start=\"1813\" data-end=\"1846\">slow-cooked, not boiled<\/strong>, to maintain the flavor and texture that is crispy on the outside and tender on the inside.<\/span><\/p><p data-start=\"1930\" data-end=\"2316\" class=\" translation-block\"><span style=\"font-size: 14pt\">Today, Ribchon continues to grow, with a new <strong data-start=\"1985\" data-end=\"2015\">Ribchon Tower Surf n\u2019 Turf<\/strong> and Taglish breakfast on the menu every quarter. According to Katipunan, <strong data-start=\"2080\" data-end=\"2137\">\u201cFour-star food, three-star price, five-star service\u201d<\/strong> is their motto.
